My healthy cooking usually consists of:
 
Grilled Scallops and Shrimps on a bed of spinach w/cheese grits. I use Asiago or Parmesan cheese, garlic, and a little paprika in the gits. Sometimes, instead of spinach, I'll make a Southwestern corn medley (corn, black beans, peppers, onions).

Low fat pizza
one pita bread

low fat mozzarella cheese
basil leaves
diced fresh romsa tomatoes or sliced if you prefer them that way
bell peppers\
olives
red onion
slices of low fat turkey breast

Just put everything on top ob the bread and bake until the cheese melts
Yummyyyyyyy!

Thanks for sharing your experience with us! Peanut butter and banana sandwiches are definitely a great snack. An alternative can be to use whole grain bread when possible and also you can use almond butter instead of peanut butter. Just a suggestion!
