Grilled Scallops and Shrimps on a bed of spinach w/cheese grits. I use Asiago or Parmesan cheese, garlic, and a little paprika in the gits. Sometimes, instead of spinach, I'll make a Southwestern corn medley (corn, black beans, peppers, onions).

Thanks for sharing your experience with us! Peanut butter and banana sandwiches are definitely a great snack. An alternative can be to use whole grain bread when possible and also you can use almond butter instead of peanut butter. Just a suggestion!
